Welcome to all of our new subscribers, I'm glad you're here. To all of our old subscribers I'm glad you're here too!

Finally Spring has arrived. At least on the calendar anyways. Enjoy! Get out and move and burn off those winter doldrums.

There are many things you can do to lose weight, both big and small. The important thing to remember is that they all help you move towards your main goal of weight loss. Keep that focus in the foreground of all your activities and meals. Have a good week!

Use low fat substitutes for dairy products wherever possible, for example, skimmed milk, low fat cheese, cottage cheese and yogurt.

Exercise

Try different types of fitness routines for varied benefits. Exercise such as yoga can improve your posture, breathing, co-ordination and agility. Martial arts such as Karate and Judo can improve your confidence and provide you with an effective form of self defense. Train for a local 5k or 10k walk or run in your area. This can be great motivation to exercise on a regular basis.

Recipe

Zesty Lemon Chicken Cutlets

Ingredients
1 pound chicken cutlets
salt to taste
freshly ground black pepper
1/4 cup flour
1 tablespoon olive oil
1 cup low-sodium chicken broth
1 teaspoon finely chopped garlic
2 tablespoons fresh lemon juice
1/4 teaspoon finely grated lemon zest
2 tablespoons chopped fresh parsley
2 tablespoons capers


Directions:
1. Season the chicken cutlets with salt and pepper and dredge them in flour.

2. In a large nonstick skillet, heat the olive oil over medium-high heat. Add the chicken and cook until golden brown on each side, about 2 minutes per side. Transfer the chicken to a platter and keep warm.

3. Add the stock and garlic to the skillet, bring the stock to a boil and reduce it by half. Add the lemon juice, lemon zest, parsley and capers. Simmer for 30 seconds and pour the sauce over the chicken. Serve immediately.

Makes 4servings.
