Welcome to all of our new subscribers, I'm glad you're here. To all of our old subscribers I'm glad you're here too!

Hope everyone is doing well. I've been pretty busy lately as I'm sure you are too. My daughter is graduating from high school in June and her prom is next week. We've been busy getting things together. I know all the mall walking is good for you as is any exercise. If you would like to see just how many calories you burn with exercise check here.

Here are some tips for some extra weight loss. Park in the furthest spot from the entrance to where you are going, take the stairs instead of an elevator, give up sugary soda and juices. I bet you don't realize how many calories you would save just by substituting water or diet drinks. A soda pop is around 150 calories for 12 ounces. Orange juice is about 100 calories for 8 ounces. Add those up and just see how much weight can be added by your intake of the wrong fluids. Giving those up may be just what you need to get going.

Exercise

You'll benefit from any amount of exercise you do. Don't get into an "all or nothing" type of thing. It's O.K. if you can't get to the gym for an hour. The truth is that every little bit helps even if it's only 10 minutes of stair climbing at home.

Recipe

Angel Hair Pasta with Asparagus and Cherry Tomatoes    

1 tsp. olive oil
1 clove garlic, minced
1 shallot, minced
2 T. fresh parsley, minced
2 T. fresh mint, minced

2 cups chopped cherry tomatoes
1 1/2 cups fresh asparagus tips
8 ounces dried angel hair pasta
1/4 cup fresh grated parmesan cheese
salt and pepper to taste

Directions:

Heat the oil in a medium nonstick skillet over medium-high heat; add garlic, shallot, parsley, and mint. Reduce heat to medium and sauté until the shallot is soft. Add tomatoes and cook, stirring often, until the tomatoes are a pulpy sauce. Stir in the asparagus tips and cook just until tips are cooked through and still bright green.

Meanwhile, cook the pasta in boiling water until
done (do not overcook); drain well. Add pasta to sauce and toss until well mixed. Season with salt and pepper. Sprinkle with cheese when serving.

Recipe makes 4 servings.

Calories: 300 per serving
