Welcome to all of our new subscribers, I'm glad you're here. To all of our old subscribers I'm glad you're here too!

Wow...I can't believe tomorrow is October. Where does time go? My daughter is graduating from high school this year and I swear I'm still trying to take off that extra pregnancy weight.  :-)

No, seriously, the weather is already starting to chill down where I live in Ohio (USA). In fact Chili was on my menu yesterday. Seemed like a good comfort food. Good diet food? I think so. My cooking goals are to always cook with a low in fat alternative. I like to convert recipes to be healthy but still taste good.

For example, I use half ground beef with half ground turkey, add plenty of veggies such as peppers, onions, mushrooms and even carrots. I also serve chili on top of plain rice to fill you up and stretch it out.

Low fat or low calorie substitution can be made for most meals. Don't be afraid to experiment...you might surprise yourself.

Most foods are tasted for only three seconds, then are swallowed and are gone. If you chew every bite at least 20 times and you will be much more satisfied.

Exercise

Make your exercise as enjoyable as possible. For example, if you're a walker, you may want to get a good CD player to listen to music or books on tape, etc. If you're exercising inside, set up a TV so that you can watch it while exercising. On the other hand, you may just prefer peace and quiet. Do whatever makes exercise most enjoyable for you. You are much more likely to exercise consistently if you enjoy it.

RICE CAKE DELIGHT

4 rice cakes
1/4 cup light cream cheese - softened
1/4 cup low-calorie fruit preserves


Directions:

Top rice cakes with cream cheese, then with preserves.

4 servings

Each serving provides: 78 calories
