Welcome to all of our new subscribers, I'm glad you're here. To all of our old subscribers I'm glad you're here too!

Dieting......does anybody really like the word or the idea. I know when I think of the word diet  I see before me a restriction. I can't have the things I want and it automatically causes me to want them more. That is why you shouldn't think you are on a diet.

I think a better choice of words is that you are choosing a healthy  lifestyle. Have the foods you want.. only in moderation. Cook in ways that cut down on calories and fat but not taste. Park at the farthest spot in the lot to get in extra steps. Before you know it that healthier life style will result in a healthier you and slimmer too!

The secret to keeping off weight is maintaining an 'Energy Balance' which is the the balance between how many calories your body takes in and burns off. Quite simply if you absorb more calories than you burn you will gain weight.

Recipe

Cheesy Potato Skins

Ingredients:

4 Large potatoes
2 tablespoons butter -- Melted
1 medium tomato -- Chopped
1/2 cup cheese -- Colby-jack
1/2 cup fat-free sour cream
5 medium green onion -- Sliced


Instructions:

Heat oven to 375º. Scrub potatoes; pierce potatoes to allow steam to escape. Bake about 45 minutes or until tender. Let stand until cool enough to handle.

Cut potatoes lengthwise into fourths; carefully scoop out pulp, leaving 1/4 inch
shells. Save potato pulp for another use.

Set oven control to broil. Place potato shells, skin sides down, on rack in broiler
pan. Brush with butter.

Broil with tops 4 to 5 inches from heat 8 to 10 minutes or until crisp and brown.

Sprinkle tomato and cheese over potatoes. Broil about 30 seconds or until cheese is melted.

Top with fat-free sour cream; sprinkle with green onions

Yield: 8 serving

Per serving: 89 Calories
